Steamed Salmon 23/01/08

There’s nothing special about the quantities. This is just what I happened to have. Most of the calories come from the fish, potatoes and butter. The veg and marinade add hardly any calories, but lots of flavour and nutritional value.

Calories per person: ~400

Preparation: chopping veg

Cooking: 15 minutes

Equipment: 3 tier steamer, knives, baking parchment, lemon squeezer

Ingredients:

200g small new potatoes

109g cauliflower

92g broccoli

52g carrot

93g green beans

10g butter

For salmon:

240g salmon fillets

42g spring onions, sliced

15ml soy sauce

Juice of 1 lime

a little chopped ginger

pepper

salt

a dash of tabasco

Instructions:

Chop veg and put in one tier of steamer, leave potatoes whole, and place in bottom saucepan of steamer. Salt to taste. Line other tier of steamer with baking parchment. Add salmon. Sprinkle with spring onions and ginger, and add soy sauce, lime juice, tabasco, salt, pepper. Leave to marinade until you’re ready to cook. Cover potatoes with enough boiling water, and bring back to the boil. Put the salmon tier on top of the potatoes, and the veg tier above it, with lid on top.

Boil potatoes for 15 minutes. Everything else should be done too.

Serve with marinade as sauce, and 5g butter per person to lubricate the veg and potatoes.
